my philosophy
Food is simply a story of classic recipes, simple flavors and a precise search for quality ingredients.
It is the ability to combine and balance ancient flavors, which solidly reside in the memory of my family culture, to new and unknown flavors that derive from other experiences.
Food is simply the ability to humbly open up to new knowledge without fear of confrontation and without prejudice.
Food is simply the simple home cooking, popular but refined, made with strong and decisive ingredients typical of the Southern Italian gastronomic culture.
To maintain its absolute nature of craftsmanship it remains an exclusive cuisine, for the few, with the complete absence of frozen, pre-cooked or pre-assembled products.
Tomatoes and vegetables are accompanied by typical Mediterranean smells such as basil, capers, oregano, marjoram, olives, parsley, rosemary, sage, bay leaf, celery, garlic, onion , the rocket, the mint, the myrtle and the lentisco.
We find these same scents combined with pastas, soups, pizzas, meats and fish.
The cooking is short in respect of the flavors and consistency of the raw materials.
Extra-virgin olive oil is almost always added raw.
Food simply is also vegetarian cuisine with the same characteristics described above.
This is how cereal dishes, vegetables and dried legumes with a Mediterranean flavor (such as cabbage and bean soup) and spicy (such as spicy quinoa salad with lentils) are born, characterized by raw materials typical of eastern and African countries.
Food is also simply Ayurvedic cuisine, with many things in common with South Indian cuisine. It is a predominantly vegetarian cuisine whose basic ingredients, all served together in a large dish, are cereals and rice accompanied by dhal (dish of dried legumes), vegetables, chutneys, poori (spicy fried bread) and lassi (yogurt and fruit drink). What characterizes this cuisine and strongly differentiates it from Western cuisine is the use of spices. At the base of Ayurvedic cuisine there are just the spices and aromatic herbs that possess particular properties able to strengthen and stimulate the organs and glands of the digestive system.
Finally, food is simply no decorative elements because it comes from an idea of poor (at home) and not perfect food whose fundamental element is its content and not its appearance!
